and Middle Eastern cuisines. It is the staple of some
traditional dishes such as hummus and couscous.
It is found in Spanish stews. Some recipes of Italians' famous
Minestrone are also found with or instead of Baked Beans.
It has also found an important place in Mexican cuisine.
Although it is usually used dried, some recipes also include
fresh.
Dried ones are boiled after soaking in water. Recently,
ready-made boiled preserves are seen.
